Well, this is a very loose interpretation of how we'll be eating this week, as I think many of our meals will be made up of nothing but soup. You see, Jackson, my little guy who was home sick last week, loves to share so much that he gave his cold to the rest of the house. Now, we're a sniffling, sneezing, coughing bunch here, in need of nothing more than warm bowls of broth and frozen popsicles to sooth our throats.
So, here is a list of what we hope to eat this week, but it's subject to change. What's on your meal plan? Do you have any miracle foods that you eat when you're feeding the sick? As always, the underlined days are when Rob is taking over the kitchen duties for dinner. Have I told you what a great cook he is?
Monday - Spicy chicken and noodle soup
Tuesday - Turkey burgers with homemade fries
Wednesday - Broccoli and pasta casserole
Thursday - Individual shepperd's pie with salad
Friday - Chicken, veggie and rice stir fry

Monday--salmon patties, creamed peas, spinach salad
Tuesday--roast chicken, roasted potatoes and carrots, fruit salad
Wednesday--eating out with friends
Thursday--shepherd's pie (thanks for the idea), green beans, applesauce
Friday--marinated pork chops, butternut squash casserole, green salad, deviled eggs
Saturday--white chili, cornbread, leftover deviled eggs
Sunday--leftovers and/or blueberry pancakes and homemade sausage

Tuesday- Leftover chili and cornbread
Wednesday-Shrimp and Veggie Stirfry with brown rice
Thursday-Chicken Noodle Soup
Friday-Pork chops in mushroom and cream sauce with green salad and farro
Saturday-Dinner out
Sunday-breakfast for dinner- blueberry pancakes and bacon (Thanks for the idea Ann!)

We had a busy weekend and were gone skiing all day yesterday. Since I work full time, I did not go shopping for groceries or plan this week... therefore, meals will be very simple and I have found a great excuse to use the things I have in the house. I have some chicken in the freezer, pasta, rice, beans, veggies, eggs... I think I can manage :o)
Monday: Meatless Monday as always so we had scrambled eggs served over a grilled English muffin with a salad.

I love seeing other peoples meal plans. It's always so inspiring. The spicy chicken noodle soup should do wonders for your colds. I hope your all feeling better soon!
