Here's what we're eating this week. There is a nice variety of proteins included in the plan and the pizza will be our vegetarian dish for the week. The underlined days indicate when Rob is on kitchen duty and my boys are going to take care of the pizza dough on Thursday night, so it's ready to go on Friday.
Monday - Chicken and veggie stir-fry with rice
Tuesday - Salmon with green beans and herb-roasted potatoes
Wednesday - Spaghetti and meatballs
Thursday - Lettuce wraps with spicy turkey and assorted toppings
Friday - Homemade pizza

Yummy! We have some good meals planned. Tonight we are having "those noodle that look like little slides" (Henry's name for rotini) with tomato sauce and turkey meatballs, there is also shrimp stir fry with brown rice, and a crockpot beef roast in our future. I think the hubby will make the stir fry. It's something he is really good at, that and breakfast. Little Chef will be helping me with the "Secret" chocolate cake cupcakes this afternoon. The secret... squash puree. The original calls for beet puree, but we've done it with both and I was able to kill two birds with one stone with the squash... puree for the cake and a big batch of baby food! Love time savers like that! I've love to hear more about the lettuce wraps please! ;)

Here is our menu this week:
Monday: Whole wheat and buckwheat pancakes with fresh fruits
Tuesday: Vegetable soup with tortellini, bread and cheese
Wednesday: Pasta with meat sauce, crudites.
Thursday: Chicken Cesar Salad
Friday: Fish
I mostly cook by myself but my son does help with baking. My teenage girls tend to stay away from the kitchen... so unlike me at their age! lolll
