With signs of Spring around in abundance this weekend, I decided to put a one-pot/crockpot meal on our menu this week as a way to say farewell to winter. I'm still wearing my toque on my early-morning dog walks so I know we haven't officially left this chilly season behind us, but I'm happy to be moving on - a least in spirit anyways.
I'm not working much this week, which is so nice leading up to March Break week with busy days and a house full of kids. As such, I will be doing almost all of the cooking but Rob's going to get in there mid-week with his rice and bean burritos. We'll share the recipe later this week, I promise! I'm also going to continue with my batch-cooking by doubling the shepherd's pie I'm making on Tuesday so we'll have one in the freezer for another day.
Also on tap for the week...lots of granola! We've completely run out and need to replenish the stock for breakfast and snacks and possibly even a weekend dinner.

Monday - Pork and Barley Stew with garlic green beans
Tuesday - Shepperd's Pie
Wednesday - Rice and bean burritos
Thursday - Spaghetti Tetrazini
Friday - Pizza with potatoes, mozzarella and thyme
Note: We're booking our summer campground spaces this week for camping weekends in June, July and August - do you have any suggestions on where we should go? We're a road-trip-loving-family and are not opposed to a bit of travel.
Another Note: Rob and I are hoping to sneak out to a movie one afternoon this week - any suggestions on what we should see? We're saving Alice in Wonderland for March Break week but would love to hear what you're watching right now and welcome any recommendations.

Monday: Orange Chicken and Veggie stir-fry over brown rice
Tuesday: Breakfast for Dinner- eggs, potatoes, sausages, and fruit salad
Wednesday: Baked ravioli
Thursday: Black beans and rice
Friday: Tofu and veggies over noodles with peanut sauce
Saturday and Sunday: Out-of-town; dinner on the road

We saw Brooklyn's Finest Saturday night. It was pretty good - depressing though. Not really action-packed per se. But an interesting, engaging story for sure.

Meals:
Monday: Breakfast for dinner (dad was away)
Tuesday: Grilled cheese with Citrus salad
Wednesday: Lentil soup with bread
Thursday: Penne with spinach, feta and olives
Friday: Not sure yet
Camping: We love camping and one of our favorite ones is Mount Desert Campground in Acadia National Park in Maine. The Province of Quebec has wonderful Provincial Parks. The White Mountain National Forest in New Hampshire is also great!
Movies: I saw Shutter Island recently - pretty good!
I can't wait for that Burrito recipe!

Our favourite place to camp, where we go every year, is Bonnechere Provincial Park, which is between Pembroke and Killaloe, on Round Lake. Gorgeous beach, beautiful sites, some along the Bonnechere River. Highly recommend it!

(I visit ever so often, you ran a b-day party for one of my kidlets last year ... which was great). I have my eyes on the tomato egg dish you posted about a very long time ago, I just haven't taken the plunge quite yet).
Camping - we are going to start this year, car camping with four kids. I have yet to figure out the menus, but have figured out the campgrounds.
We are bound for Pinery in June and Killbear in August (booked on Sunday ... 5 month lead time). I also thought about Awenda. Grundy and Killarney are other options. Somewhat close if you were contemplating maine within driving distance. These are all provincial parks.

we love MacGregor Point Provincial Park- has both woods and beach. we've been 3 times.
