Happy Easter Monday! Like many of you, our yesterday was filled with chocolate, good food and loved ones. As a result, we're all feeling the need to eat a little lighter this week, and have planned our meals for the week accordingly.
As a lover of salad, I've been trying to incorporate a few more varieties into our meals but am feeling a little uninspired at the moment. So, if you have a favourite salad you're currently enjoying please let me know about it in the comments and I'll be sure to give it a try. And if it's kid-friendly, even better!
As always, Rob's night to chef-it-up is underlined and the meal in which I plan to do a little batch cooking is asterisked (this week it will be stocking the freezer with some containers of brown rice).
Monday - Beef enchiladas with avocado mash
Tuesday - Roast chicken, baked potatoes and broccoli
Wednesday - Lemon pasta with leeks, peas and feta
*Thursday - Brown Rice Bowl - rice topped with julienned veggies, fried egg, sesame oil and hot sauce
Friday - Turkey Burgers (with green apple, lemon and celery) on foccacia with brie, mixed green salad




We have a favourite salad and it is very simple. Spring mix, strawberries, blueberries, goat cheese and toasted almonds. Drizzle with raspberry dressing. This salad is even better when the berries are in season! My kids love this one.

that weird looking veggie i thought was a bittermelon happens to be a karella. saw it in a grocery flyer this week. how did you end up cooking it?

I like your rice bowl idea, my boys love eggs so this would probably go over well.

Hi Wanda - Youre right..it is a Karella. There is another comment here with a great explanation on how to cook it. Unfortunately, I left it too long and when I went to experiment it had gone bad!

Hi Aimee - We love the rice bowl! We even let the kids customize their veggies so everyone is happy with what they are eating!
