Hi Jan! Well, before all of our new allergy issues (eek!) my go to fifteen minute meal was a take on bahmi (an Indonesian dish)
no yolk egg noodles (boiled in salted water)
sauté an onion and cubed ham with some curry powder and ketjap manis (a drizzle)
toss the sautéed mixture in with the drained noodles adding some frozen peas and a bit more ketjap manis to taste. the peas cook as you stir through the hot noodles. a green salad with a peanut sauce dressing. yummy!

We are loving salad bar night. I cut up lots of colorful veggies on Sunday and put them in little containers. Then I set them all up, add some diced chicken, cubed cheese, and maybes some whole grain crackers, and everyone comes to fill their plates. I love this combination of foods, especially with feta.

We live on less pasta that we used to, but this type of dish is one of my favorites especially with the garlic and red peppers.

Sometimes I sauté sliced tomatoes in garlic and olive oil for a few minutes and pour it over freshly boiled pasta. We grate pecorino over the top add a little freshly ground pepper. Good stuff.

Something else. I stirred the pasta into the completed sauce, tipped into a baking dish topped with breadcreams and a little grated cheese and baked in the oven for about 15 mins. Delicious!
