Cooking once and eating twice is one of my favourite things in life. I love working hard one day, only to know that the next day's meal will be a breeze.
On the weekends we tend to have hearty meals like roast chicken and pork tenderloin, and often pair those meats with a potato dish. I've been making a simple mash for most of these meals, and I've starting adding some extra veggies into the pot for a little flavour (and colour) boost.
The version we've most enjoyed lately is a kale-enhanced one. My kids aren't too keen about this leafy green when left on it's own, but tucked into mashed up tubers makes it so much more palatable for them.
Meal number two is concocted from the leftovers of this dish, which I form into patties and fry up to make little cakes. They are panko encrusted and such a hit with the kids (but isn't anything with a crunchy, golden exterior?).

Mashed Potato and Kale Cakes
Make your favourite mashed potatoes, adding chopped kale (2-4 cups) to your pot of boiling water. Using the leftovers, form into little patties, approx. 2-3 inches in diameter. Dip into an egg wash, then cover with panko or regular breadcrumbs. Fry in an oiled pan set over medium high heat. Cook until warm throughout, and golden brown on all sides.
