Happy Monday! Did you have a tasty weekend?
Here's what we're planning on eating this week. I'm feeling a little over root vegetables these days, so I'm incorporating more beans in our meals to make up for the absence of tubers and such. How about you? What are you eating right now, when one season is getting ready to close and another is soon to start?
Monday:: 5-spice pork tenderloin, basmati rice, sesame broccoli
Tuesday:: Black bean, corn and goat cheese tacos with radish and romaine
Wednesday:: Ginger-scallion soup with rice noodles, carrots and bok choy
Thursday:: Pinto bean, spinach and bacon hash
Friday:: Chicken club pizza
