Happy Monday! Despite the grey skies (again) this morning I'm looking forward to this week and this weekend. And I have some good news. Last night when I sat down to do my weekly meal planning it took very little effort to come up with a week's worth of simple meals. What a welcome change from last week.
Here's what we're eating for dinner this week. What are you cooking up for your family?
Monday:: Pasta with asparagus, goat cheese and chives, French green salad
Tuesday: Spicy beef and corn chowder, crispy tortilla chips
Wednesday: Pulled-chicken tacos, avocado cream, black beans with lime
Thursday: Egg fried rice with veggies and sprouts
Friday:: Homemade pizza night

Remember I mentioned that I had something fun to share with you all?
I'd like to introduce you to Party Savvy, the newest edition of Savvy Mom. It's a monthly feature that's "a guide, a plan and a recipe for party success", and I'm fortunate enough to be part of it. As you know, my day is job is as a party planner and I LOVE that I now have the opportunity to combine my event planning skills with food writing. I love planning parties, even more than I love cooking, so this is a dream job for me. I take care of the food, cake and all the recipes, so when you're planning your next birthday party head on over for some inspiration.
The caterpillar sandwich above is just one of the ideas I came up with for the "Celebration of Spring" theme, and the recipe can be found here. Oh, and maybe check out the cake too. It's pretty fun!

How fun! And great timing as I have two little girls with birthdays coming up.
