Can I have three cheers for a short work week?
Rob and the kids are both off for four day over the upcoming long weekend, and before we reach that point I have a slew of assignments to hand in, a special project to work on, and a trip to Washington to organize. Jackson and I are taking off for the DC area in a week to celebrate his tenth birthday.
It sounds a little extravagant I'm sure, but when the kids were really little I made a plan to take each of them on a mother-son trip for their tenth birthday. We adore road trips so it needs to be to a destination that we can drive to, and other than that stipulation each boy got to pick their desired location. Ben and I went to New York City for his tenth, and Jackson and I are heading off to the Smithsonian and surrounding area next Tuesday.
While I plow through a mountain of things before then, I'll leave you with our meal plan for this week. My goal here was to organize four very easy dinners that will be as quick to make as they are tasty to eat. What are you cooking up this week?
Monday: Leek frittata, pan-fried potatoes, mixed greens with mango dressing
Tuesday:: Turkey sloppy joe sliders and vegetable soup
Wednesday: Burrito bowls with rice, beans, salsa, grated cheddar, green onions and soup cream
Thursday: Crunchy baked chicken with green beans
