I'm sorry to say I don't have a recipe for you today. We have finally come to the end of a very busy few weeks in our home, with this week being particularly hectic, and I'm out of time for a lengthy post. I did make the above salad which was nothing more than some baby spinach, fresh goat cheese, pecans, strawberries and avocado. Served with a homemade or balsamic vinaigrette and you have a quick and delicious lunch or side-dish to dinner. The combination of the avocado and strawberry is great and I'm considering making a frozen popsicle with those flavours...
That salad looks perfect. I never thought of putting avacados with strawberries, but I will now.

It was really good. I found an old recipe from Gourmet magazine (for the 1980's) that combined strawberries and avocado in a salsa-type mixture and I thought maybe they would work nicely in a salad...and they really did.
