My favorite summer meal is a fish fry with fresh caught fish served with homemade coleslaw, fresh homegrown tomatoes, and watermelon slices.

My mouth is watering just thinking about it!

It's hard to tell, but I am into ice pops, and my favorites are mango (smash with water and sugar) with plain yougurt.

Last night we had home made french bread (lightly toasted) with tomatoes & basil from our garden and some fresh mozzarella & olive oil. Yum Yum! I think I could eat it for dinner all summer...

Why is it that in the summer I don't feel bad offering up salad for dinner and making it out of the things I have on hand? Summer cooking is so relaxed.
Tonight I made a composed salad with greens, leftover roasted chicken, peaches, blueberries, toasted macadamia nuts, and feta all drizzled with white wine vinegar and olive oil. Everyone, kids and grownups, was happy. I didnt have to run to the store. It was easy. And we even had enough time to hit the library before bedtime. That's what I love about summer.

Aim

My favorite bbq salad is so easy, and yet, SO good! Baby red potatoes, parsley, asparagus, green onion, bacon (how could it be bad with bacon in it?!), and a little mayo, salt and pepper. You just cook the reds, throw the asparagus in at the last, put everything else in a bowl, and toss the warm veggies in at the last minute. The mayo soaks into the potatoes, so it's really light. Plus, my kids love it!
