Today's recipe comes from the lovely Lisa at Thimbleberry Kitschen, who I met via this blog. She is a fellow Canadian, located in Southern Ontario and a mama of two little ones. I knew she was a kindred soul when she planned to dress up her entire family as well known chefs for Halloween. I asked her to participate in my "Ten Days of Cookies" and she happily obliged with not one, but two, cookie recipes.
The first is her peanut butter thumbprint recipe. How yummy do these look? The photos are lovely and I can't wait to devour some of these with a glass of milk.

Peanut Butter Thumbprints, courtesy of Lisa 1/2 cup unsalted butter - room temperature 1/2 cup smooth all natural peanut butter 1 1/4 cup granulated sugar 1 egg 2 tablespoons milk 1/4 cup granulated sugar for dipping
2 cups all purpose flour
1/4 cup raspberry jam (seedless - though with seeds works too!)
~ In the bowl of an electric mixer fitted with a paddle attachment, cream the butter, peanut butter and sugar on medium speed until smooth.
~ With the mixer on low speed, add the egg and milk and mix until incorporated.
~ With the mixer still on low, add the flour and mix until just combined.
~ Refrigerate the dough for 2 hours.
~ Preheat oven to 350 degrees.
~ Line cookie sheets with parchment paper.
~ Scoop the dough with 2 spoons or a small ice cream scoop.
~ With your hands, roll each cookie into a 1 inch ball.
~ *Optional - Dip the top of the cookie into sugar.
~ Make a small indent with the end of a wooden spoon or your thumb!
~ Fill each indent with 1/2 teaspoon jam.
~ Bake 12-15 minutes.
Makes 4 dozen.

My grandmother always made these while I was growing up. Except, instead of the jam, she pushed an unwrapped Hershey's Kiss down into the center of each one. Yum!

Those are such adorable, chubby cookies! My mother made them and put chocolate in them too. My kids would love these....

Peanuts, as well as being rich in proteins, serves to produce an excellent oil which gives it many uses. Who has delighted not eating some chocolates or a chocolate bar filled with peanuts? Now, that you make your mouth water, we began to offer several delicious recipes.
