It's so great to be home! How was your week, friends? Ben and I went on a road trip to NYC last week, returning last night, and while we had the most fantastic time together, I'm so happy to be home. And he is too, I think. I'm also so thrilled to be back to my kitchen. My tiny small space for all these fun endeavours.
I haven't cooked or made a thing since Tuesday of last week. Isn't that crazy? I feel an equal mix of gratitude for having the opportunity to not cook, and fervent excitement to get back to it. For starters I need to meal plan for this week, and I'm doing it a little backwards this time. Rob did some food shopping while I was away, so I'm going to prepare our meals based on what we have, not what we need. A quick perusal of the fridge and pantry has yielded the following for this weeks meals:
Monday - Mexican salad - romaine topped with chopped chili-chicken, pinto beans, cheese and avocado with a lime-honey dressing (stuffed in wraps for the boys)
Tuesday - Roasted asparagus, bacon and goat cheese pizza
Wednesday - Asparagus soup with roasted garlic toasts
Thursday - Baked potato bar with assorted toppings
Friday - No cooking. We're all out this night!
Also...while we did eat lots of goodies last week when away, this donut you see pictured was hands down the best of the lot. We picked them up at a farmer's market we happened upon at the Staten Island Ferry. They were homemade by the farmer, cake-like in texture and dressed in a fantastic cinnamon-sugar topping. I plan on trying to emulate these goodies in the near future - I will let you know if I succeed.
