It feels so good to be home. I have much to share with you about our West Coast adventures including tales of the best Mexican food we've ever had, our new favourite nightly drink, eco-dairies, gourmet coffee shacks, family recipes, weird food people eat, Pike Place Market in Seattle and a funny story about muffins.
But it'll have to wait until my suitcases are fully unpacked, the pantry and fridge have been replenished and the groggy eyes have recovered from a highly turbulent, all-night flight home in which a complete day of sleep was missed.
Having said that, I already have a fantastic batch of muffins in the oven and a few meals I'm ready to share. It feels good to get back to routine, and for us that includes a return to the weekly food plan. We abandoned the meal planning ship in July for no reason other than we were just too busy. It was a bustling four weeks with little time spent at home and nary a proper grocery shop made. We ate what was here and didn't think much about it. But August is here and we're back to business with a meal plan and plenty of grocery shopping in the plans. Here is a glimpse of what's on our menu:
Monday - Grilled zucchini and goat cheese pizzas with blueberry salad
Tuesday - Pasta alla trapanese
Wednesday - BBQ chicken and mexican corn-on-the-cob
Thursday - Taco salad
Friday - Salmon and warm potato salad
