I had the night to myself last night while Rob and the boys are away on another boys-only camping trip, and truth be told I really needed it. I had laundry to do, an article to write, a fridge to clean and a book to read. I've also been super sleepy this week which I think is a combination of coming down from my post-vacation high and rushing back to a busy week at work.
I've been trying to slow down my pace a little, just so I can enjoy these last few weeks of summer, but for one reason or another we seem to be on the go almost every night. This makes dinner a little challenging and has reminded me I really need to equip myself with an arsenal of twenty-minute meals for the upcoming school year. Do you have any suggestions? I would love to hear them.
Here are a few things I'm thinking about this week:
- Are you going to visit a friend or family member at a cottage this summer? S'mores To-Go Boxes would make a fun hostess gift. They can be as simple or as elegant as you like and really, who doesn't like campfire cookies?
- I'm a little obsessed with all things River Cottage. The books are fantastic as is the website which lists fabulous seasonal recipes.
- I work with this fun girl. Her grilled pizza recipe looks fantastic.
- We're making a bruschetta bar for dinner on Sunday. With this bread. I want to perfect my bread making skills this fall. If you have a favourite recipe or book recommendation please let me know.
- Like many others out there, I can't wait to watch her eat this weekend.
- We made these popsicles. Um, yum. Double yum.

Did you watch the movie yet? I saw it last night. I liked it - but I think I liked the book more.
