I've been asked (several times) if I am able to provide dinner ideas, so I'm going to bring back Meal Planning Monday. I was anxious to get my sister's baby shower photos up yesterday, so I'll share what we're eating this week, in today's post.
As always, if you would like to share what you're cooking up this week, please feel free to leave your menu in the comments section, and together we can come up with a long list of ideas for the lovely readers.
Monday:: Turkey tacos and green salad
Tuesday:: Chicken with forty cloves of garlic, wild rice and French green beans (recipe to come this week)
Wednesday:: Winter squash soup and roasted garlic toasts
Thursday:: Pasta with prosciutto, mixed mushrooms and sage
Friday:: Balsamic steak, roasted root veggies with sea salt, herbs and goat cheese.
A few things about this list.....
- Friday dinners are little more fancy, simply because I'm home that day. Which means I have the time to cook.
- The rest of the meals are based around what we have going on in the evenings. Everyone needs to be out the door early on Wednesdays, so I put together a soup on Tuesday evening for us to heat up quickly, the following evening. This week we're all out the door by 6:15 or so on Thursday, and I work until after 5pm, so a quick pasta is in order for that night.
- I base my entire shopping list on what I'm going to cook for dinner this week, so if I meal plan by Sunday morning I'm in good shape for the rest of the week.
- We've started asking for the kids input into the meal plan. Steak was requested by all three boys, making it a for-sure menu item for the week.
- We always try to incorporate at least one meatless meal into our weekly plan. It just doesn't always fall on Monday.

Monday: lamb chops and quinoa salad with balsamic roasted mushrooms
Tuesday: bulgur tomato soup with roasted sweet potato and feta cheese
Wednesday: Pasta ala mama and green salad
Thursday: baked potato night
Friday: sea bass and green salad with freshly baked bread

Love the planning ahead and the use of homemade soup for a quicky meal.
I also try to (even though my hubby still fights it) have at least one meatless meal a week.
