Happy Family Day. I love the we now have a long weekend smack in the middle of winter, don't you?
Are you all still meal planning? I fell off the wagon for a while last November and December when I was ridiculously busy at work and at home, but I've been back to doing it for the past five or six weeks and what a difference it makes to our nightly meals, my grocery shopping and our wallets. I can't praise the planning enough.
Monday :: Cheesy potato nachos with black beans and avocado/green salad
Tuesday:: Roasted chicken with root vegetable/baby spinach salad
Wednesday:: Croque monsieur with cauliflower soup
Thursday:: Pasta with chicken (leftover), oregano, leeks, lemon and peas
Friday:: Homemade pizza night
How about you? What are you eating for dinner this week?
Monday: crockpot pepper steak, rice, oranges
Tuesday: pancakes and sausage
Wednesday: eat out
Thursday: spanakopita, apple slices
Friday: eating at a friends' house
Saturday: marinated rib eye steaks, baked potatoes, salad (teen son's first meal after a 30 hour fast/poverty awareness event)
Sunday: homemade pizza
Next week: looking forward to trying some recipes from Eating Well magazine newest issue
