If it were up to me, the salad you see above would be my dinner every night this week. A bed of mixed greens, topped with tiny slivers of red onion, a drizzle of maple Dijon vinaigrette and three little goat cheese toasts. Total perfection if you ask me. But since I live with three boys who simple cannot subsist on greens alone, we have other things on the meal plan this week.
Monday: Roast chicken, warm goat cheese salad (above) and green beans
Tuesday: Pork fried rice with napa cabbage, carrots and red pepper
Wednesday: Watercress soup, salad and baguette
Thursday: Farfalle with roasted butternut squash, bacon and sage
Friday: Croque monsiuer and mixed green salad
See! I did manage to squeeze a few greens in there throughout the week. Do you think they'll notice?
