I didn't have the chance to meal plan last week. I was working from home, and away from home, for almost 10 ten days straight and by the time last Wednesday night came around, we were all tired and eating eggs for dinner.
I'm back on track this week, and I made a point of setting a date with myself last night for my weekly meal planning. It was just me, a large cup of tea, some magazines, a few favourite cookbooks and Jackson, my persistent child who insisted I stop meal planning so I could tie his water balloons (??). He needed to plant them in a hole that he dug in the backyard. Then he requested that I help him find darts so he could attack the balloons. Really, sometimes it's best not to know what he's up to.
Rob told me yesterday afternoon that he suspects Jackson might blow up our house one day with one of his wacky experiments. I'd like to disagree with him, but I'm secretly scared he might be right. Some of his ideas have seen him out in the back yard at ten o'clock at night trying to make a bomb with a potato and a piece of his mama's knitting wool. Or how about making a bow and arrow from my wooden chopsticks, which he doctored by creating an "authentic" pointy end after running them through the electric pencil sharpener. It all sounds incredibly violent I'm sure, but really he's just an adventurer, and these are the items used back in the day of knights and warriors and superheroes; men who lived lives of great excitement.
So, while I was tying the balloons I asked Jack what he'd like for dinner this week and he emphatically stated "Pork!!". The sentiment was echoed by Ben, who was playing a far less dangerous game of hockey in the driveway (although maybe not - he's currently sporting a cast on his arm and a semi-cut lip from the puck he took in the face last week when he decided to play driveway hockey against his Dad with said cast on his arm). Pork seems like a safe bet for dinner this week, and I need a little safe around here, so it made the meal planning cut.
As for the rest of the meals? I've planned them out, and as long as I'm not driving someone to the hospital, playing nurse or repairing an LED light that was taken apart with a pair of kitchen shears (so it could be attached to bicycle gloves via wire to make a repulsor - again, I don't ask) I should be able to stick to the menu.

Monday:: Maple-glazed pork tenderloin, white bean mash, green beans
Tuesday:: Lasagna primavera, salad
Wednesday:: Indian-spice chicken, basmati rice, peas
Thursday:: Spanish frittata, spinach salad
Friday:: Sausage and mushroom pizza
**Note - We had vegetarian dinners on both Saturday and Sunday night this past weekend so I've included a little more meat in my meals then I normally would. I'm still trying to cook only three meat meals a week.
