Yesterday, I made this week's winning dish from week 6 of Recipe to Riches, the newest competition show to hit Food Network Canada. If you remember, I was asked to be an official Recipe to Riches blogger, meaning that over the duration of the program, I will make three of the triumphant recipes, and then write about them here the morning after the winner is announced.
This week's challenge was frozen desserts and for the first time in a long time, I was completely stumped by the name of a recipe. When it landed it in my in-box late Monday afternoon, I can honestly say I had no idea what Kulfi was until I read through the ingredients list. Even then, I wasn't completely sure.
Using three varieties of milk (evaporated, condensed and cream), a touch of sugar, rosewater, cardamom and pistachios, I was able to decipher the Indian origin of the recipe, but it was completely new to me. Created by Rosie Soobrattee (of Milton, ON and Vancouver, B.C.), her recipe was inspired by her grandfather, who once owned a sweets shop in India.
I'm curious to see how this recipe will do on the grocery store shelves. The more sophisticated cousin of regular ice cream sweets, this spicy-infused confection seems more cocktail party than family gathering, but I could be wrong. (side note: while working in catering we were often asked to provide pop-in-your-mouth bite-sized ice cream treats to be passed around post hors d'ouevres. It was a hugely popular option, especially with the older crowd, and I can see this treat doing well if served that way).
The recipe suggested cutting the frozen treat into bite-sized squares and serving it on a muffin liner. As usual, I put my own spin on the presentation by reserving a touch of the mixture and pouring it into a tiny glass jar. I can see passing around tiny vessels of this sweet and eating it with a spoon, more than I can imagine trying to eat it with my fingers, but as I mentioned some people do enjoy that.

Kulfi is new to me too. I like your idea of making a jar dessert out of it.
