For the first time in six months, I don't have soup on the weekly meal plan, and the kids are ecstatic. It isn't that they don't enjoy a bowl of brothy goodness, because they do sometimes, it's just that they've eaten a whole lot of it over the past few months and I think they're ready for a change. But aren't we all?
Now that we've all but left winter behind, the soup pot is temporarily being retired and I've put a sandwich and a burger on the dinner menu this week. These are all very simple meals that should find their way onto the table in about 30 minutes, maybe even less. I've finally come to accept that weeknight dinners must be quickly put together, and the more lengthy recipes need to be saved for the weekend, but that's okay because it gives me something to look forward to.

Tuesday: Croque monsieur with mixed greens
Wednesday: Chicken Milanese and white bean and kale salad
Thursday: Turkey burgers and salad with buttermilk dressing
Friday: Baked potato bar
