As you can tell by the title of this post, my meal planning Monday feature is back in action. I was amazed by the number of people who emailed to say they missed seeing what we were eating for dinner each week.
I didn't stop for any particular reason, but what I did notice is that when I wasn't sharing my meal planning here, I was a little more lax in executing a proper plan for our week. This space kept me accountable for getting a good dinner on the table each night!

Monday: Pasta with peas, pesto and smokey sausage, apple and fennel salad
Tuesday: Green lentil soup and cornbread
Wednesday: 30-minute pizza with spinach and feta, quinoa salad
Thursday: Butter chicken and naan
Friday: Brown rice and veggie bowls with poached eggs
PS - The photo above is from yesterday...We made it out to the sugar bush and Rob and Jackson competed in the Flapjack Olympics. They won the bronze medal in the pancake stacking competition with a whopping 29 stacked in one minute.
