Last night, I was void of the mental energy required to plan a week's worth of meal, so I grabbed a copy of the latest edition of Everyday Food and rifled through it to come up with five easy dinners. Sometimes the easiest meals are really the ones that require the least amount of thought.
We have a few busy nights ahead of us (side note: please remind me next year that it's not such a good idea to sign a kid up for football on a weeknight, at a field on the other side of the city, that you need to get to during Toronto's evening rush hour ), and I know that all of these meals will come together quickly, which was the only requirement I gave myself when putting them together.
I didn't realize it as I was compiling the ideas, but I think we ended up with a nice balance of seasonal flavours, not too mention a good mix of meat and veggie-based dinners.
Here's what I'm cooking up for dinner this week:
Monday: Tortellini soup with peas and spinach, cured meat, cheese and crackers
Tuesday: Roast chicken, smashed potatoes, spinach salad
Wednesday: Gluten-free mac and cheese with green salad
Thursday: Sausage and polenta bake with asparagus
Friday: Chicken curry and coconut rice
