Oh my gosh, I think I fell off the blogging train this past week. Where did the time go?
The good news though, is that I while I was absent from here I made a fantastic quinoa salad with blackberries, pistachios and crumbled feta. It was bright and flavourful, and thoroughly devoured by Rob and I. The bad news, however, is that I won't be sharing the recipe until tomorrow because I need a picture to show you all what a beauty this salad is.
In the meantime I thought I would tell you that the latest edition of Party Savvy ran last weekend, and this time we put together a Mexican fiesta, which is a perfect summer party theme for your little señors and señoritas.
It can be a challenge to come up with new and interesting ways to serve fruits and veggies at a party, so I was happy with the way these Fiesta Fruit Cups turned out. Made with mango, pineapple and watermelon, and garnished with lime and coconut, these are healthy party fare that are also so pretty to look at.
This Mexican Jumping Bean Rainbow Cake was layered with colours that matched the theme of the party, and decorated with sour jelly beans which mimic the infamous jumping beans from south of the border.
When I was testing recipes for this party, this Mexican Mac and Cheese was hands down the boys' favourite. They ate it for dinner, and lunch, and asked for more later in the week. Even if we're not planning a party, I'm certain this recipe will be making an appearance at our table many more times this summer.
Oh yes! I also made cupcakes...Mayan Chocolate Cupcakes to be exact. And they came complete with printable party signs and instructions for making simple sombreros out of white chocolate, gum drops and sprinkles.
