The road trip treats are packed, the kids are mostly organized, and our bags are resting by the door waiting to be tucked into the back of the van. In essence, we're almost ready for vacation. What was supposed to be a week-long trek across the Southern US has turned into a ten-day seaside getaway, and I couldn't be happier about it.
While I skip town for a while I wanted to leave you some of my favourite recipes for easy summer dinners, potlucks and picnics, and more. These have been culled from my archives - which I've been diligently organizing in an effort to bring you a thorough recipe index upon my return - and are some of our warm-weather favourites.
